Organic Matcha Powder: Steeped in Japanese Tradition

The popularity of matcha has skyrocketed in recent years. And with good reason—this green tea derivative boasts many benefits, thanks to its unique production. Matcha is made from green tea leaves (Camellia sinensis) that are shade-grown for roughly 3–4 weeks prior to harvest—a process that encourages the plants to produce more theanine and caffeine, as well as amino acids and chlorophyll. The harvested leaves are de-stemmed and de-veined and can be sold as loose leaf or bagged tea, or as a highly concentrated powder. Matcha is rich in antioxidants, caffeine, theanine, as well as minerals and amino acids typically found in green tea (thanks to its concentrated form).

Matcha can be used as a coffee or tea substitute, or as an ingredient in sweet and savoury dishes. To make matcha tea, scoop the powder into a small sieve and sift it into a matcha mixing bowl. Then, add a small amount of hot water and use a matcha whisk (known as a chasen) to vigorously whisk the mixture from side to side to completely disperse the tea powder in the water and create a foamy layer on top. Pour the mixture into a mug or cup, and finish off with more hot water or steamed milk.

Matcha has a shelf-life of 12 months after purchase, unopened. Once opened, matcha is best consumed within 21 days. Store matcha powder in an airtight container in a cool, dry place away from direct sunlight.
