Microgreens are essentially seedlings. They’re more mature than sprouts, but younger than baby leaf vegetables. By definition, they possess a short stem, one set of cotyledon leaves, and one set of small true leaves. While tiny in size, they pack a heavy nutritional punch. Some microgreens contain up to 28 times the amount of beneficial compounds in mature plants.

Microgreens are considerably high in phytochemicals such as beta-carotene, lutein, zeaxanthin, and sulforaphane. High levels of antioxidants and other compounds help these baby plants to defend themselves and develop properly. Because microgreens are so small yet so nutritious, they offer excellent bang for their buck. You can grow them on shelves indoors under LED lights or place them out in the garden or greenhouse.
