Recipe: Medicated Coconut Macaroons

Macaroons are a French delicacy loved the world over. It would be hard to think of a way to improve them, unless of course, you enjoy cooking with cannabis! This is a delicious recipe will show you how to make your very own cannabis-infused coconut macaroons. Preparation time is 10 minutes and cooking time is 12 minutes so your dish should be ready in about 25 minutes.

INGREDIENTS
- 1 1/3 cups of flaked coconut
- 1/3 cup of sugar
- 2 tablespoons of flour
- A Pinch of salt
- 2 Egg whites
- 1/2 Teaspoon Vanilla extract
- 2 Tablespoons cannabis butter
- Baking chocolate or chocolate chips (any kind works)
- Chopped nuts (optional)
INSTRUCTIONS
1. Preheat oven to 160°C and grease a large baking sheet or tray.
2. Use a mixing bowl to combine the coconut, sugar, flour and salt. Mix thoroughly and make sure you break up all the clumpy bits!
3. Use a different bowl to pour the egg whites into.
4. Mix in your half teaspoon of vanilla extract and use a whisk to whip the mixture until you have a batter with a thick, glossy and sticky consistency.
5. Pour the egg white batter into the coconut and flour mixture and churn it up thoroughly. You should be left with an airy, fluffy mixture.
6. Once ready, place individual tablespoon scoops of the mixture onto the greased tray. You should get about 10 - 15 scoops.
7. Put the tray in your preheated oven for about 15-18 minutes or the macaroons have a golden brown tinge. Keep an eye on them so they don’t burn, as they may do so on the bottom.
8. Next, you need to make cannabis chocolate. Pour some water in a pan and place a glass bowl above it. Heat the water to a boil and then add the cannabis butter to the bowl, allowing it to melt.
9. When all the butter is melted, add the chocolate to the bowl and gently combine the ingredients until you're left with a smooth and silky chocolate sauce.
After you have allowed the cooked macaroons to cool for a few minutes, gently dip them in the cannabis-infused chocolate sauce and allow the chocolate to harden. Be careful with your dosage as the more chocolate you use, the more medicated you will be!
Now your macaroons are ready to eat and enjoy! Remember, edibles can take anywhere up to two hours to have an effect, so don’t overdo it!
